Recipe: Chocolate Crackle Cookies.


These cookies are so yummy, they're crunchy around the edges and soft in the middle, just how a cookie should be.

Ingredients:

1 c. semi-sweet choc. chips
1 c. brown sugar, packed
1/3 c. vegetable oil
2 eggs
1 c. flour
1 tsp. vanilla
1 tsp. baking powder
1/4 tsp. salt
about 1/2 c. powdered sugar

Preheat oven to 350.

Melt choc. - combine with brown sugar & oil.
Add eggs one at a time, beat well.
Add vanilla.
Add baking powder, flour, salt. Mix well.
Chill dough until it can be handled by hand without making a gooey mess, then drop by teaspoonfuls into powdered sugar and roll to coat.
Place on greased cookie sheet.
Bake 10-12 minutes.

Tip: Be sure to roll the cookies into small balls. You will think they look way too small but when cooking they flatten right out, these are not very fluffy cookies.
