Cream Cheese Cheddar Rolls.


After I graduated high school I worked in the mall for a few years before I went to college. The mall in my hometown is more like a hall. It's teensy. There are not really any stores worth mentioning besides Macy's. There was a locally owned kitchen store that sold really overpriced cooking gear and in the back of the store they had a little coffee counter that everyone in the mall went to for breakfast, lunch and dinner. The food was amazing. They had all kinds of rolls and quiche, casseroles, sandwiches, and of course, cookies and brownies. My favorite things to order were the cream cheese cheddar rolls and the garlic rolls.


They ended up going out of business. Well really, the owner just locked up and left town in the middle of the night one night. It was all very strange and suspicious. It was a sad day though because that meant no more delicious rolls. I hadn't thought much about it in awhile but I heard recently someone is trying to reopen the store. How exciting! Except the new owner doesn't have the old owner's recipes. Reading all about this on facebook gave me the idea to try making the cream cheese cheddar rolls. Turns out to be ridiculously simple!


Ingredients:

12 oz. regular cream cheese
2 c. grated cheddar cheese
small amount of oil
pamesan cheese
ingredients for your favorite bread or roll recipe

First, find your favorite white bread or roll recipe.

Prepare your bread/roll recipe up until the point where your dough is ready to be used. 

Mix plain cream cheese with grated cheddar cheese in a bowl. 

There are several ways to fill your rolls. I'm not really sure which is the best. I tried rolling out my dough on a floured surface and cutting it into squares (or circles if you have a large circle cutter). Then I put a heaping spoonful of my cheese mix in the middle and brought all the edges around it to a close. 

I also tried folding them like a taco bell taco which worked well but I didn't like it, it's not roll-ish enough for me. Then I tried just rolling the dough into balls, pressing a hole in the middle with my fingers, filling it full with cheese mixture and closing it up again. 

However you choose to fill the rolls, just be sure that they are not too thin as you don't want the cheese mixture to ooze out of them onto your pan, and that you don't fill them too full. 

Bake as directed per your bread recipe. 

When there are 5 minutes remaining, brush the tops of the rolls with oil and sprinkle parmesan cheese on top, continue baking. 

Let cool for a few minutes and enjoy! 

The melted cheeses mixed together is so yummy! If you don't eat them all right away, pop them in the microwave for 15 seconds for warm rolls.

  5. cheese baked in bread is like heaven sent! oh how i wish i could reach into the computer and grab a roll! when will technology get there! hehe that would be super creepy actually. i wish i was more of baker...i need more room in my little casa.

It's one in the morning, and I should be going to bed, but instead I'm looking at your delicious food and my stomach is grumbling - because, well, there's NOTHING better than cream chesse - it's totally one of my favorite, favorite foods!
