Homemade Scalloped Potatoes.

This is clearly Jake's plate as I don't eat steak and I prefer my vegetables to not have gone anywhere near butter. 

I love scalloped potatoes. They are, to me, the ultimate comfort food. We didn't really eat a lot of them growing up until after my parents divorced and boxed meals were my dad's specialty; he has since branched out. The other day I was in the grocery store and saw a box of scalloped potatoes and was hit with a wave of nostalgia. I bought the box and made them for dinner and it was delicious. Looking at my dinner I began wondering how easy it would be to make them from scratch. It looked really simple and had very basic ingredients. I began scouring the web for recipes, taking ideas from here and there and piecing together something that sounded delicious to me. I tried it and it's now going into my arsenal of easy and delicious foods for when I'm not feeling particularly ambitious.


This recipe makes enough for 2-3 people.

2 large russet potatoes peeled and cut into thin slices
2 T butter
2 T flour
1 1/4 c milk
1 1/2 c grated cheese - your choice. I used half sharp cheddar and half pepper jack.
1/3 c diced white or yellow onion
1/4 c chopped green onion
1 t salt
1/2 t cayenne pepper - if you don't have any, use Tabasco
2t minced garlic - or more if you're like me and love garlic - could sub garlic powder.

This is before I added green onions. I also used paprika to give it some color although it's not necessary. 

Preheat oven to 450
Grease a small casserole dish.

In a small skillet melt butter on low and mix in flour (use a whisk), add milk, diced onion, salt, cayenne, minced garlic, and pepper. Let boil. Slowly add 1 cup of grated cheese, stirring as it melts.

Place half of your potato slices in the bottom of the greased dish. Be sure they're spread evenly.
Pour half of the sauce over the potatoes.
Add the rest of the potatoes and cover with the rest of the sauce.
Sprinkle the remaining cheese over the top along with the green onions.

Bake at 450 for 30-40 min.


If you're a meat eater try adding small pieces of bacon or ham for some added flavor.
