Broccoli Casserole.


My older brother and his family came over last night for snacks and dessert and my mom and I made broccoli casserole which is my favorite. My mom always makes it for Thanksgiving and Christmas. It's definitely a family favorite that we always talk her into making for us. I mean, what's better than broccoli and cheese?


Ingredients:
1-2 bunches broccoli depending on size. One big bunch would do.
1 can cream of mushroom soup (do not add the water)
1 c. mayo
1 onion chopped - my mom likes to use half an onion, I like to use a whole onion.
2 eggs well beaten
1 c. grated cheddar cheese
1 c. bread crumbs
Preheat oven to 350.

Cook broccoli, chop into little pieces.
Mix eggs, mayo and soup in large bowl.
Add broccoli, cheese and onions, mix well. Add salt and pepper if you'd like.
Pour mixture into greased baking dish.
Spread bread crumbs over the top.
Bake for 45 min.

I love the crunchiness of the bread when it comes right out of the oven. Although it's good the next day too when it's kind of squishy. 

My eyebrows are all puffy because I just had them waxed for the first time in 6 months. I know that's a really long time to go without getting your eyebrows taken care of but one time this lady pulled off a layer of skin when she waxed my eyebrows so now I'm deathly afraid to go to anyone other than to one lady back home who leaves my face intact.

  3. Sounds yummy Jordan! I love how you and Mom differ on how much onion to add; every cook has thier own little recipe spin!

    Ouch on the waxing! In all my years of waxing clients, I've never hurt anyone; finding someone who does it properly is so important. To combat the puffiness, sometimes dabbing on cold Milk helps.
